Hydromechanical grease traps manage the flow of water and force it through a baffle that catches fats, oils, and grease inside the grease trap. The sizing of these units ranges drastically based on the volume of cooking a restaurant plans to do. The small size handles 8 pounds, processing 4 gallons of water per minute. The largest size handles 100 lbs, which can treat 50 gallons of water per minute. If the restaurant or commercial kitchen relies heavily on mass production of fatty foods that require oils, the latter works best.
Gravity grease interceptors force water through multiple compartments in a vertical layout to slow down the flow and allow fats, oils, and grease to separate from the water. Gravity grease traps are larger because of the extra compartments, but they're also significantly more efficient, capturing about 90% of grease, fats, and oils that flow through it.
